Spaghetti all’amatriciana

Can be prepared equally well with that bucatini with spaghetti, although the original recipe calls for the latter. The original recipe, born to Amateur, a small town on the border with Abruzzo Lazio, expected strictly spaghetti and not the bucatini so much that even the municipal signs at the entrance to the city indicate “Amateur, City of Spaghetti”.

 

INGREDIENTS for 10 people

  • 1 kg spaghetti
  • finely sliced ​​onion
  • bacon, diced
  • chilli, finely chopped
  • fresh tomato, cut into pieces
  • grated pecorino
  • olive oil
  • sale

PREPARATION

Fry the onion in the oil; when it is golden, add the bacon and chilli. Do take the pillow color, remove from sauce and keep aside. This is the secret why remains tender and tasty until the dressing is completed.

Now remove the onion and pepper and add the tomato. Cook for 6 the 7 minutes: as the Romans say, more than cooked must be "mortified".

Boil the spaghetti, drain well and toss with the pieces of bacon, grated pecorino cheese and fresh tomato sauce.
