Spätzle with zucchini and sausage

Typical dish from Tyrolean, I love it, both in winter and summer. It can be eaten hot or cold with a variety of condiments, from the richest to lighter. That's what I'm going to present is typical summer with zucchini and sausage. There is also the variant with spinach (gave spaetzle) with bacon and cream, that would be the original dish, more suitable for cold weather.

In preparation, we must obtain the typical tool that I have made to arrive from abroad, since many years ago here not sold. Now they sell it in the best shops of household and is also found on online stores.

The tool can be of two types. This is what I have:

is used by placing it on the pot with boiling water jumps by dropping the dough from the little holes that will form the spaetzle.

Ingredients for 3 people

  • 3 whole eggs
  • 200 grams of flour
  • 1 pinch of salt
  • milk as needed
  • nutmeg and pepper to taste
  • two zucchini
  • two sausages
  • clove of garlic
  • parsley
  • olive oil

Preparation

Boil salted water in a pot with high sides. Meanwhile prepare the dressing. Take a frying pan, sbriciolarci inside the sausage and add the zucchini cut into thin rounds. Put the garlic and olive oil. Salt. Saute for 5 minutes and sprinkle with half a cup of hot water. Allow to cook on low heat for 10 minutes.

Prepare the dough of spaetzle. In a bowl beat the eggs and the flour alternating with milk. The dough should be thick but not too much, so that it can then leak into the holes of the special pass. Add salt and mix well. Place the strainer over the pot of boiling water and bring down the dough for spaeztle with the help of the special spatula. Allow to cook for a few minutes, such as gnocchi and then drain them and put them in the pan with the sauce. Dust with nutmeg, Parmesan and pepper and fry in a pan for 30 seconds.
